This burger is a healthier choice because its made with quality lean beef. If you’re really watching the calories, get rid of the carbohydrates by serving it with a mixed salad instead of the cheese and burger bun. Either way, it will taste amazing!
juicy lean beef burgers
- 600g lean minced beef
- 1 small onion, finely chopped
- ½ bunch parsley, finely chopped
- 1 egg
- 1 cup fresh white breadcrumbs
- 2 tablespoons tomato sauce
- 1 tablespoon Worcestershire sauce
- sea salt and freshly ground black pepper to taste
- 4 soft burger buns, split and toasted
- 1 ripe tomato, sliced
- 4 slices Swiss or cheddar cheese
- 1 cup mayonnaise
To make caramelised onion relish (optional)
- 4 large brown onions, thinly sliced
- 100g butter
- 2 tablespoons olive oil
- ¼ cup balsamic vinegar
- ½ cup dark brown sugar
First make the burgers. In a large bowl combine the lean beef mince, onion, parsley, egg, breadcrumbs, tomato sauce, Worcestershire sauce, salt & pepper. Mix well. Shape mixture into 4 or 6 patties. Cover and chill for at least 10 minutes. This helps them hold together better while you cook them. Meanwhile, make the caramelised onions. In a large frying pan, melt butter and oil together over a medium heat and add the sliced onions. Cook, stirring occasionally for about 20 minutes until onions are soft and golden brown. Stir in the balsamic vinegar and brown sugar. stirring for a further 5-10 minutes then allow to cool. Heat BBQ, griddle or frying pan to a medium heat. Brush burgers with a little olive oil and cook for about 5 minutes on each side until cooked to your liking. Remove and rest for about 2 minutes. Spread the burger bun each side with mayonnaise, then pile in a slice of tomato, the burger, a slice of cheese. Then top cheese with a generous dollop of caramelised onion and serve with salad or chunky chips.
Tip: If you choose to make caramelised onions from scratch you can make double the quality well ahead of time and stored in a clean airtight refrigerated jar until required. If you’re short of time you can buy caramelised onion relish from your local Ritchie’s store and use that instead. Serves 4.
